Golden beetroot, Granny Smith apple, and carrot come together in this delicious juice blend that has a slightly different flavor than it’s ruby red counterpart.

Why We Love This ABC Juice Recipe

Although apple beetroot carrot juice is very popular, beets themselves can be a divisive ingredient. Some may find their flavor overwhelming or too earthy. 

Chef Ari Sexner opted to use golden beets in this recipe to highlight a brighter, refreshing flavor combo that appeals to all. Here’s what he had to say about his creation:

“All too often beet blends are deep, deep red. There are many varieties of beets out there to choose from, each with varying flavors. With this blend we wanted to showcase the golden beet, which has a slightly different sweetness to it than the red beets.

Next, we wanted a few acidic components to balance out the sweetness, so we chose green apple and lemon.  Finally, to make this juice really vibrant and add depth of flavor, we incorporated carrots into the blend.”

Equipment note: We used the M-1 commercial juice press to make this juice shot recipe, but you can use pretty much any type of juicer (masticating, centrifugal, etc.). Just keep in mind that the quality will always be higher when using a juice press.

Ingredients

carrot 14 oz 397 g 6 1/2 medium carrots
green apple 8 oz 227 g 1 1/5 medium apples
gold beet 1.75 oz 50 g 1/3 beet
lemon (optional) 0.65 oz 18 g 1/6 medium lemon

Directions

  1. Wash the produce thoroughly.

  2. Remove the top ends of the carrots and beets.

  3. Weigh the ingredients.

  4. Juice all ingredients together.

Pro Tips

  • As long as you wash your vegetables well and remove any blemishes, there is no need to remove the nutrient-rich peels of your root vegetables.

  • Don’t see golden beetroots at your local grocery store? Use red beets for a more classic take on this ABC blend.

  • Not a fan of beets but want all these amazing health benefits? Supplement with a little extra apple and add ice cubes to your cup for a less intense beetroot flavor.
