Sweet Potato Pie Juice

This sweet potato juice recipe includes cinnamon, carrot, apple, and more. It tastes like Thanksgiving dessert, only healthier!

Ingredients

sweet potato 6.56 oz 186 g 1 1/2 medium sweet potatoes
carrot 7.5 oz 213 g 3 1/2 medium carrots
green apple 3.75 oz 106 g 1/2 medium apple
red apple 3.75 oz 106 g 1/2 medium apple
lemon 0.375 oz 11 g 1/10 of a lemon
ginger 0.328 oz 9 g 1 inch chunk ginger
ground cinnamon 0.1 oz 3 g 1 large pinch
ground nutmeg 0.02 oz 0.6 g 1 small pinch
ground clove 0.02 oz 0.6 g 1 small pinch

Directions

  1. Wash and weigh all produce, making sure to scrub the sweet potatoes in a sink to remove any dirt.

  2. Quarter the lemon (leaving skin on) and place directly into the press. If you don’t have a juice press, peel the lemon and juice with the rest of the ingredients.

  3. Juice all fruits and veggies.

  4. Whisk the spices into the juice.

Pro tips

  • If you like turmeric, toss a pinch of that in as well!

  • Want some extra creaminess? A splash or two of coconut milk will do the trick.

  • Want even more nutrition? Toss in some leafy greens like kale or spinach. The taste won’t be impacted too much (but the color won’t be as pretty).
