Denver has long been known for its craft beer and is the home to more breweries than any city in the United States – with the exception of Chicago. It is no wonder then, that the mile high city’s appreciation for quality handcrafted beverages has resulted in a juice boom with a growing demand for true, cold pressed juice.

A few weeks ago while traveling to Denver for a conference, I decided to take the opportunity to visit some of our juice bar customers and see what they were up to. As I started doing my research, I realized that the majority of the juice bars offering fresh, cold pressed juice in Denver are part of the Goodnature family! I made it my mission to visit as many of them as I could, including two new lifestyle brands that are opening very soon. Stay tuned for juice recipes from some of these awesome juice bars!

The Juicing Tree

This is where it all began. The Juicing Tree was the first cold pressed juice bar to set up shop in Denver, opening in 2012. Fast forward seven years, The Juicing Tree is a solid fixture in Denver with two locations. Paul started The Juicing Tree with just a few Norwalk juicers and since then has added two Goodnature X-1s to keep up with the demand.

The thing that stood out to me more than everything else at The Juicing Tree is the extensive menu with its unique and flavorful juices. Paul credits his large variety of juice and juice ingredients on his need to ‘always be creating’ and perfecting recipes that can be consistently replicated. I was able to sample many of the juices and nut mylks, all of which tasted amazing, but my two favorites were “Jumpsuit” (Arugula, fennel, celery, granny smith, ginger and lime) and “Insalata” (kale, spinach, romaine, chard, celery, cilantro, cucumber, leek, jalapeno and lemon). Jumpsuit had a very distinct licorice flavor due to the fennel, which I love. Insalata tastes uncannily like gazpacho, and in my opinion is a great meal replacement juice.  Sound yummy? Well they are!

Six years ago, Nikki made the move from the coast of New Jersey to Denver and “immediately started looking for cold-pressed juice”. She found that there were not a lot of options like she was accustomed to. Knowing the demand for juice was going to eventually grow like it did on the east coast, she ordered a Norwalk juicer, found a commissary kitchen and starting selling juice at festivals and farmers markets. Soon after, she opened up her brick and mortar cafe, The Corner Beet, in Denver’s Capitol Hill neighborhood. Almost a year into juicing with the X-1 Mini, Nikki is thrilled with the cold pressed juicer, “It took a long time to save for it, but it’s totally worth it and has more than paid for itself already”.

Aside from the amazingly chill atmosphere, one of the things that really impressed me is that juice makes up almost half of The Corner Beet’s total sales, even though they do not bottle or offer ‘grab and go’ juices. They have a very zen way of making juice – they like to be creative in the moment, “…following a few rules” and let the  produce that is fresh and in season to help dictate the juices they make—they have only a few mainstay recipes and they are not always available. “Our best selling juice is one of our original recipes, it’s called BonVivant” (kale, spinach, romaine, cucumber, parsley, apple, lemon and ginger), as you can see proudly displayed on the exterior wall. Nikki is working hard to spread the juice in Denver and has plans for expansion. “We have made a licensing agreement to open a location in Cherry Creek next to a Rise Nation, and further hope to expand into other areas of Denver”.

I met up with Beth at Transform Colorado, the fitness studio she opened a few years ago and where she currently sells her juices to “test” the market. She is gearing up for her new juice bar and fitness studio location slated to open this coming June in the RiNo neighborhood. The decision for Beth to open a juice bar alongside her fitness and yoga business was an organic one. “I have always had a love for health and wellness…I have found from ten plus years working in the fitness industry, people who care about taking care of their bodies, also care about what they put into their body”. Beth is working hard on perfecting her menu, she will have several nut mylks, juices, smoothies, protein shakes, acai bowls and a full tonic and coffee/tea bar featuring the use of adaptogens.

I was lucky enough to try WELLth’s most popular juice so far, the “Unicorn” (red apple, carrot, pineapple, lemon and ginger), fresh off the X-1 press. Beth says it’s a great beginner juice because it’s balanced and it tastes so good “…it really tastes like nature’s starburst”, and I had to agree with her, it really did taste like candy!

Husband and wife team Megan and Trent are looking forward to Lacuna’s grand opening this coming June, “Our goal at Lacuna is to help people live better lives”. Merging their passions for clean eating and global travel with Meg’s background in yoga, the couple is busy putting the finishing touches on the sustainable building space they had built in the RiNo neighborhood. Meg and Trent gave me a tour of the building as they explained their vision, from the kitchen where their Goodnature X-1 juicer will live, to the hanging bed and Moroccan lanterns in the juice bar area—they have spared no expense to bring you a luxurious and exotic experience. The peaceful atmosphere and unique recipes are both inspired by their travels to places like Morocco, Mexico, and Costa Rica. Aside from organic juice, Meg said they will also offer a pretty extensive menu including soups, salads, and smoothies, with an emphasis on ingredients that add to health and well being, “We’re passionate about integrating superfoods and adaptogens into our products so people get real benefits from the food we serve”.
