Celery Juice Benefits, Recipes, and Profitability

I’m sure you have noticed all the hype about celery juice these past few weeks, with over 73,000 #celeryjuice tags on Instagram, it’s a little hard not to. If you’re not already offering pure celery juice in your juice bar, you probably should. Let’s take a closer look at the benefits from both nutritional and business perspectives:

Health Benefits:

Celery juice is being credited with a ton of health benefits and is being hailed as a superfood. So what are these benefits? I looked to the ever-so-handy Juicing Companion for guidance. I’ve also included a screenshot of the book’s page on celery below.

  • Reduces acidity
  • Anti-inflammatory
  • Antioxidant
  • Prevents asthma
  • Lowers blood pressure
  • Prevents some forms of cancer
  • Lowers cholesterol
  • Improves kidney function
  • Improves nervous system
  • Prevents osteoarthritis
  • Prevents rheumatoid arthritis
  • Prevents tumor growth
  • Prevents urinary stones
  • Promotes weight loss

Wow, that’s a long list and I have read that people are seeing even more benefits, including healing skin issues and alkalizing the body.  I can see why this juice is being put on a pedestal!

Celery juice can be easily incorporated to a juice business’ offerings. According to Anthony William—known as the “Originator of Global Celery Juice Movement”—  in his Medical Medium Article, celery juice is the most powerful when you drink it straight without any other ingredients AND on an empty stomach. He states, “I’ve seen thousands of people who suffer from chronic and mystery illness restore their health by drinking 16 ounces of celery juice daily on an empty stomach.” Following this logic,  celery juice would make a great addition to a cleanse package.

Adding other ingredients

If you are a little hesitant to add straight celery juice to the menu, I am noticing that a lot of juice bars are adding in a little bit of lemon. Here in Buffalo, New York, we like to pair our celery juice with a shot of blue cheese and a side of crispy, hot Buffalo Wings….just kidding, but not saying we haven’t thought about it! But seriously, as you probably already know, lemon pairs well with most juice ingredients, enhances the flavors of juice, has amazing health benefits and helps to preserve juice life.

Here’s what founder of  The Balanced Bee Annie Parks, who holds a degree in Kinesiology + Integrative Nutrition, had to say when we asked her advice on straight celery juice vs. celery juice with other ingredients: Customers come looking for us to juice straight celery juice.  (In fact, they get a little “salty” that we won’t accommodate straight celery juice).  Our suggestion at The Balanced Bee Juice & Broth Restorative is to furnish a balance of celery, lime, ginger.  The abundant benefits of celery are SUPERCHARGED by combining it with alkalizing lime and healing ginger.”

In The Juicing Companion, Ari offers up some other great flavor pairing ideas for combining ingredients with celery:

Celery + grape + apple + lemon  Light fruity blend
Celery + kale + cucumber + green apple + lemon + ginger Green juice version
Celery + tomato + cucumber + garlic + spinach + lime + jalapeno + salt Creative and spicy

Profitability:

We got some current celery pricing from a produce purveyor to do some calculations and determine how profitable it can be to add celery juice to your menu. For this exercise we assumed $0.75 in packaging cost (bottle, label, cap). We are using the method described in our article Calculating Juice Profit Margin. Your costs on both celery and packaging may be different, and you may decide to charge more or less for the juice.

Organic Conventional
12 oz / 350 ml 16 oz / 500 ml 12 oz / 350 ml 16 oz / 500 ml
Food Cost $1.11 $1.48 $0.92 $1.23
Packaging Cost $0.75 $0.75 $0.75 $0.75
Suggested Price $5.99 $7.99 $4.99 $5.99
Gross Profit $4.13 $5.76 $3.32 $4.01
Gross Margin 68.9% 72.1% 66.5% 67.0%
